
Mumbai, March 8: Celebrity chef Vikas Khanna believes that Indian cuisine is undergoing a significant transformation in Western countries. During the recent finale shoot of ‘MasterChef India’ Season 9, he stated that the art of cooking is ever-evolving and never stagnant.
While conversing with fellow judges Ranveer Brar and Kunal Kapoor on set, Khanna remarked, “I think dishes are always evolving; they are never framed and static like the Mona Lisa. Cooking is an art that changes and progresses. I see Indian food continuously transforming abroad.”
He elaborated, “We are on the brink of change, in a constant state of evolution where colors, forms, shapes, flavors, service, ambiance, and presentation will keep changing, yet the roots will remain strong and grounded. As we often say on MasterChef, ‘You cooked for me, not just for yourself, but for my childhood.’ Every dish begins and evolves from those emotional connections.”
Khanna emphasized that this evolution is tied to human development, society, commerce, and culture. Food is not merely sustenance; it reflects our stories. He has trained in culinary arts and built an international career in the United States. He served as the executive chef and co-owner of the Michelin-starred restaurant Junoon in New York for several years.
In India, he is renowned as a judge on ‘MasterChef India,’ where he appears alongside professional chefs and experts across multiple seasons. Beyond television, he has authored several cookbooks focused on Indian cuisine and regional culinary traditions. He is also active in charitable work related to food diplomacy and hunger alleviation. His focus remains on highlighting traditional Indian techniques while reaching global audiences through restaurants, books, and television.
In Season 9 of ‘MasterChef India,’ Vikas, Ranveer Brar, and Kunal Kapoor served as judges. The show celebrates the diversity and creativity of Indian home cooking, providing a significant platform for chefs to showcase Indian dishes on a global stage.
