  • 1 medium-sized onion, finely chopped

  • 1 small potato, diced into small cubes

  • 2 green chilies, finely chopped

  • 10–12 curry leaves

  • ½ tsp mustard seeds (rai)

  • ½ tsp turmeric powder

  • ½ tsp sugar

  • 1 tsp lemon juice

  • 2 tbsp oil

  • 2 tbsp raw peanuts

  • Salt, to taste

  • Fresh coriander leaves, for garnishing


How to Make Maharashtrian Kanda Poha at Home

Step 1: Prepare the Poha

Start by rinsing the poha gently under running water using a sieve or a wide bowl. Be careful not to soak it too long, or it will become mushy. Let the water drain completely.

Once drained, mix the poha with turmeric powder, sugar, and salt. Set it aside to absorb the flavors.

Step 2: Prepare the Tempering

In a heavy-bottomed pan or kadhai, heat the oil. Add mustard seeds and let them splutter. Then, add peanuts and fry until golden brown.

Next, add curry leaves, chopped green chilies, diced potato, and chopped onion. Cook on medium flame until the onions turn translucent and the potatoes are soft.

Step 3: Combine Poha with Tempering

Add the prepared poha mixture to the pan and gently mix everything on a low flame. Cook for 2–3 minutes so the flavors combine well.

Finish with a squeeze of lemon juice and give it a final stir.

Turn off the heat, cover the pan, and let the poha steam for a couple of minutes.
